  • 2 medium zucchinis, grated Make sure to squeeze excess moisture out.
  • 1 cup almond flour Can substitute with coconut flour or other gluten-free flours.
  • 1/2 cup shredded mozzarella cheese Other cheeses like feta or cheddar can be used.
  • 2 large eggs Can replace with flax eggs or unsweetened applesauce for vegan option.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp baking powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
  3. In a large bowl, combine the zucchini, almond flour, mozzarella cheese, eggs, garlic powder, onion powder, baking powder, salt, and pepper. Mix until well combined.
Baking
  1. Divide the mixture into bagel shapes on the prepared baking sheet.
  2. Bake for 20-25 minutes or until golden brown.
  3. Allow to cool slightly before serving.

Notes

Store leftover bagels in an airtight container in the fridge for up to three days. For longer storage, freeze them for up to three months.
