  • 1 cup peanut butter Creamy or crunchy, based on preference.
  • 1/4 cup soy sauce Use low-sodium if desired.
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 teaspoon red pepper flakes Adjust for spice preference.
  • Salt and pepper to taste
  • Jasmine rice for serving Cooked, to serve with the chicken.
  • Fresh veggies for serving e.g., steamed broccoli or bell peppers.

Method
 

Preparation
  1. In a bowl, mix together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, red pepper flakes, salt, and pepper.
  2. Place chicken thighs in the crockpot and pour the peanut sauce over them.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
Serving
  1. Serve the chicken over cooked jasmine rice with fresh veggies on the side.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Adjust the amount of red pepper flakes based on your spice preference. Pair with additional toppings like chopped peanuts or cilantro for added texture and flavor.
