Ingredients
  

For the Marinade
  • 1/4 cup Soy sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Honey
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
Main Ingredients
  • 1 pound Chicken thighs Can substitute with chicken breasts
  • 2 large Peaches, sliced Use ripe but firm peaches for best results
  • 1 tablespoon Oil for grilling

Method
 

Preparation
  1. In a bowl, mix soy sauce, minced garlic, grated ginger, honey, lime juice, salt, and pepper to create a marinade.
  2. Add chicken thighs to the marinade and let them soak for at least 30 minutes.
  3. While the chicken is marinating, slice the peaches.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Remove chicken from the marinade and grill for 6-7 minutes on each side or until cooked through.
  3. During the last few minutes of grilling, add the peach slices to the grill to caramelize.
Serving
  1. Serve the grilled chicken thighs topped with the grilled peaches.

Notes

Pat the chicken dry before grilling for a better sear. Do not over-marinate; 30 minutes to 2 hours is enough. For variations, use chili flakes or jalapeƱo for heat, or swap honey for brown sugar or maple syrup for different sweetness.
