Preparation
- In a bowl, mix soy sauce, minced garlic, grated ginger, honey, lime juice, salt, and pepper to create a marinade.
- Add chicken thighs to the marinade and let them soak for at least 30 minutes.
- While the chicken is marinating, slice the peaches.
Cooking
- Preheat your grill to medium-high heat.
- Remove chicken from the marinade and grill for 6-7 minutes on each side or until cooked through.
- During the last few minutes of grilling, add the peach slices to the grill to caramelize.
Serving
- Serve the grilled chicken thighs topped with the grilled peaches.
Notes
Pat the chicken dry before grilling for a better sear. Do not over-marinate; 30 minutes to 2 hours is enough. For variations, use chili flakes or jalapeƱo for heat, or swap honey for brown sugar or maple syrup for different sweetness.
