  • 2 large sweet potatoes Peeled and cut into chunks
  • 2 tablespoons olive oil For mixing with the sauce
  • 1 tablespoon honey Adds sweetness
  • 1 teaspoon cayenne pepper For spiciness
  • to taste salt and pepper Adjust based on preference
  • chopped to taste green onions For garnish

Method
 

Preparation
  1. Peel and cut the sweet potatoes into chunks.
  2. Boil the chunks in salted water until they are tender, about 15–20 minutes.
  3. Drain and put the cooked potatoes in a large bowl.
  4. Mash the sweet potatoes with a fork or potato masher until mostly smooth.
Sauce and Baking
  1. In a small bowl, mix olive oil, honey, cayenne pepper, salt, and pepper.
  2. Pour the sauce over the mashed potatoes and stir until it is well mixed.
  3. Put the mixture into a baking dish and flatten it slightly.
  4. Bake at 400°F (200°C) for 20 minutes or until the edges are slightly crispy.
  5. Sprinkle chopped green onions on top before serving.

Notes

Serve warm as a side with roasted chicken, grilled fish, or a simple salad. Can be spooned over greens or grain bowls. Add extra green onions or a drizzle of olive oil before serving. Store in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10–15 minutes or in the microwave until hot.
