Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix raspberry jam, chopped jalapeño, soy sauce, and olive oil until well combined.
  3. Season the chicken thighs with salt and pepper.
  4. Coat the chicken thighs in the raspberry jalapeño sauce and place them in a baking dish.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  2. Serve the chicken garnished with fresh cilantro.

Notes

If you prefer a milder dish, you can remove the seeds from the jalapeño before chopping it. Feel free to adjust the amount of raspberry jam based on your sweetness preference. Marinating the chicken in the sauce for a few hours adds even more flavor.
