  • 1 cup raspberries Fresh or thawed if using frozen
  • 2-3 pieces jalapeños, finely chopped Adjust for spice level
  • 1/2 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a blender, combine raspberries, jalapeños, honey, soy sauce, olive oil, salt, and pepper; blend until smooth to create the glaze.
  3. Place the chicken breasts in a baking dish and pour the glaze over them, ensuring they are well-coated.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
Serving
  1. Serve with rice or a fresh salad, and consider adding a squeeze of lime over the top.

Notes

For extra heat, leave some seeds in the jalapeños. Marinate the chicken in the glaze for a couple of hours before baking for more flavor. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
