Ingredients
  

For the chicken
  • 1 lb chicken breast, cut into bite-sized pieces Use even small pieces for even cooking.
  • 2 tbsp vegetable oil For stir-frying.
  • 2 stalks green onions, chopped For garnish.
For the sauce
  • 1/2 cup soy sauce Use gluten-free soy sauce or tamari to make it gluten-free.
  • 3 cloves garlic, minced
  • 1/4 cup brown sugar Adjust to taste; add more for sweetness.
For serving
  • 4 servings rice or noodles Serve hot to soak up the sauce.

Preparation
  1. Mix soy sauce, minced garlic, and brown sugar in a bowl. Stir until the sugar starts to dissolve.
Cooking
  1. Heat 2 tbsp vegetable oil in a large pan or wok over medium-high heat.
  2. Add the bite-sized chicken pieces in a single layer. Cook without crowding the pan until the chicken is browned, about 5-7 minutes.
  3. Pour the sauce mix over the cooked chicken. Let it simmer and thicken for 2-3 minutes while stirring. The sugar will create a shiny glaze.
  4. Taste and adjust seasoning, adding a little water or rice vinegar if it's too salty, or more brown sugar if not sweet enough.
  5. Turn off the heat and sprinkle chopped green onions on top. Serve hot over rice or noodles.

Notes

Cool the chicken to room temperature before storing. Store in an airtight container in the fridge for up to 3-4 days. For freezing, place in a freezer-safe container for up to 2 months. Reheat in a pan or microwave until hot.
