Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Use fresh garlic for best flavor.
  • Salt and pepper to taste
  • Juice of 1 lemon lemon juice Add last to keep its bright taste.
Optional Toppings
  • nuts, seeds, or feta cheese Add for texture and taste.

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted.
  4. Stir in the white beans, and cook for an additional 3-4 minutes until heated through.
  5. Season with salt, pepper, and lemon juice.
  6. Serve in a bowl and top with your choice of nuts, seeds, or feta cheese.

Notes

Cool to room temperature before storing in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave. If spinach releases water, drain before adding beans. Warm the beans first if they are cold to heat evenly.
