- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add fresh spinach to the skillet and cook until wilted.
- Stir in the white beans, and cook for an additional 3-4 minutes until heated through.
- Season with salt, pepper, and lemon juice.
- Serve in a bowl and top with your choice of nuts, seeds, or feta cheese.
Notes
Cool to room temperature before storing in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave. If spinach releases water, drain before adding beans. Warm the beans first if they are cold to heat evenly.
