Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, chopped artichokes, chopped spinach, cottage cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, salt, and pepper.
- Mix well until all ingredients are combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Drizzle a little olive oil on top for added flavor and moisture.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly before serving.
Notes
Serve warm. It pairs well with rice, pasta, or a green salad. Can be spooned over toasted bread or used as a filling for wraps. Garnish with extra Parmesan or a sprinkle of black pepper. Store leftovers in an airtight container for up to 3-4 days.
