  • 2 cups fresh spinach, chopped Use fresh spinach for a cleaner taste and texture.
  • 1/2 cup pepperoncini peppers, chopped Drain well if they are very wet.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste Taste before adding salt; feta is already salty.
  • Crusty bread or crackers for serving

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine feta cheese, chopped spinach, pepperoncini peppers, and minced garlic.
  3. Drizzle with olive oil and season with salt and pepper.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the feta is soft and slightly golden.
Serving
  1. Spoon the warm dip into a bowl or serve it right from the baking dish.
  2. Offer crusty bread, pita, or crackers for dipping.
  3. Add fresh herbs or a drizzle of olive oil on top for a pretty touch.

Notes

Let the dip cool to room temperature before storing. Put it in an airtight container and keep it in the fridge for up to 3 days. Reheat gently in the oven or microwave until warm. Do not refreeze after reheating. Variations include adding chopped sun-dried tomatoes for sweetness or mixing in a spoon of cream cheese for extra creaminess.
