Preparation
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix the Calabrian chili paste, olive oil, minced garlic, salt, and black pepper.
- Pat the chicken dry with paper towels and rub the chili mixture all over the chicken, including under the skin.
- Place the lemon slices inside the cavity of the chicken.
Cooking
- Place the chicken on a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- Let the chicken rest for 10 minutes before carving.
- Garnish with fresh herbs and serve.
Notes
For a different flavor, consider marinating the chicken in the chili mixture for a few hours before roasting. You can also pair this dish with light sides like roasted vegetables or a simple salad.
