  • 4 pieces chicken pieces (thighs or breasts)
  • 1 cup rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream (or milk) For a lighter option
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken pieces with salt, pepper, and paprika. Add chicken to the skillet and cook until browned on both sides.
  3. Remove the chicken and set aside.
Cooking
  1. In the same skillet, add chopped onion and minced garlic, sautéing until softened.
  2. Stir in rice, then add chicken broth and heavy cream. Bring to a boil.
  3. Return the chicken to the skillet, reduce heat to low, cover, and simmer for about 25-30 minutes, or until the rice is cooked and the chicken is tender.
  4. Garnish with chopped parsley before serving.

Notes

For extra flavor, marinate the chicken in the seasoning mixture for a few hours before cooking. You can switch out the rice for brown rice or quinoa, just adjust the cooking time accordingly. Adding vegetables like bell peppers or peas can enhance the dish's nutritional value.
