  • 4 pieces boneless, skinless chicken breasts
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth Can be substituted with water or vegetable broth.
  • 1/4 cup fresh basil, chopped Use fresh for the best flavor.
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • as needed serving Pasta or crusty bread For serving.

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. In a separate bowl, combine diced tomatoes, chicken broth, basil, garlic, salt, pepper, and Italian seasoning.
  3. Pour the tomato mixture over the chicken breasts.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
Serving
  1. Slice or shred the chicken and spoon sauce over it.
  2. Serve on top of cooked pasta, rice, or mashed potatoes.
  3. Offer crusty bread to soak up the sauce.
  4. You may add grated Parmesan or extra basil if desired.

Notes

Let the chicken cool to room temperature before storage. Store in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months. Thaw in the fridge before reheating. Use fresh basil for the best flavor.
