  • 2 lbs chicken thighs
  • 1/2 cup soy sauce Use tamari for a gluten-free option.
  • 1/4 cup honey Adjust to taste for sweetness.
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame seeds For garnish.
  • 1 stalk green onion, sliced For garnish.

Method
 

Preparation
  1. In a bowl, mix together soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar.
  2. Place chicken thighs in the slow cooker and pour the sauce over the top.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  2. Before serving, sprinkle with sesame seeds and green onion.

Notes

Serve over rice or noodles. Leftovers should be stored in an airtight container in the refrigerator for 3-4 days. To reheat, warm in the microwave or on the stovetop. For a thicker sauce, simmer the leftover sauce on the stove before serving.
