  • 8 pieces chicken drumsticks
  • 1/2 cup soy sauce Use tamari for gluten-free option.
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons cornstarch
  • 1/4 cup water
For serving
  • 2 cups steamed rice
  • 1 cup vegetables (optional) Any preferred vegetables.

Preparation
  1. In a bowl, mix soy sauce, honey, rice vinegar, minced garlic, and grated ginger to create the glaze.
  2. Coat the chicken drumsticks in the glaze and place them in the slow cooker.
  3. In a small bowl, mix cornstarch and water to create a slurry; add it to the slow cooker and stir.
Cooking
  1. Cover and cook on low for 4-6 hours or high for 2-3 hours.
Serving
  1. Serve the glazed drumsticks over steamed rice and optionally add cooked vegetables on the side.
  2. Garnish with sesame seeds or sliced green onions for color and crunch.

Notes

Pat the drumsticks dry before coating for better glaze adherence. For a thicker sauce, remove chicken near the end and cook the sauce on high with the lid off to reduce. For a caramelized finish, broil cooked drumsticks for 2-3 minutes, watching closely to prevent burning.
