Ingredients
  

Main Ingredients
  • 4 pieces boneless chicken breasts Pat chicken dry before marinating.
  • 2 pieces lemons (zested and juiced) Freshly squeezed lemon juice is best.
  • 1/4 cup fresh dill (chopped) Use fresh for best flavor. Dried dill can be used but reduce the amount.
  • 3 tablespoons olive oil Can be omitted but will affect moisture.
  • 2 cloves garlic (minced) Reduce amount for child-friendly version.
  • to taste Salt and pepper Add to taste.

Method
 

Preparation
  1. Preheat grill or oven to 375°F (190°C).
  2. In a bowl, mix lemon juice, zest, olive oil, chopped dill, minced garlic, salt, and pepper.
  3. Coat chicken breasts with the marinade and let it sit for at least 30 minutes.
Cooking
  1. Grill chicken for 6-7 minutes on each side, or bake in the oven for 25-30 minutes, until fully cooked.
Serving
  1. Slice the chicken and place it on the plate next to roasted vegetables or a green salad. Pour a little extra lemon juice over the top for more brightness.

Notes

Cool the chicken to room temperature, then store in an airtight container in the fridge for up to 3 days. For longer storage, freeze the cooked chicken for up to 3 months. Thaw in the fridge before reheating. Let the cooked chicken rest for 5 minutes before slicing to keep it juicy.
