Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 8 ounces mushrooms, sliced
  • 1 cup Asiago cheese, grated Use freshly grated for best melt and flavor.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter sauce.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Method
 

Cooking the Chicken
  1. In a large skillet over medium heat, heat the olive oil.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook each side until golden brown and cooked through, about 6-7 minutes per side.
  4. Remove chicken from skillet and set aside.
Making the Sauce
  1. In the same skillet, add the sliced mushrooms and cook until they are soft and browned, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute.
  3. Pour in the heavy cream and bring to a simmer.
  4. Stir in the grated Asiago cheese until melted and the sauce is creamy.
Bringing it Together
  1. Return the chicken to the skillet, spooning the sauce over the chicken.
  2. Cook for an additional 2-3 minutes until heated through.
  3. Serve hot, garnished with chopped parsley.

Notes

Serve over pasta, rice, or mashed potatoes to soak up the sauce. Add steamed vegetables or a green salad for balance.
