  • 4 pieces boneless, skinless chicken breasts
  • 1 cup heavy cream Use full-fat for a richer sauce.
  • 1 cup chicken broth
  • 1 cup mushrooms, sliced Slice evenly for consistent cooking.
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Cajun seasoning Adjust to taste.
  • Salt and pepper to taste
For Serving
  • to taste Cooked rice or mashed potatoes Serve chicken and sauce over.

Method
 

Preparation
  1. In a large skillet, heat some oil over medium heat. Add the onions and garlic, and sauté until soft.
  2. Add the mushrooms and cook until tender.
  3. Stir in the chicken breasts and cook until browned on both sides.
Cooking
  1. Pour in the heavy cream and chicken broth, then add Worcestershire sauce and Cajun seasoning.
  2. Season with salt and pepper, and let simmer until the chicken is cooked through and the sauce has thickened.
Serving
  1. Serve the chicken and sauce hot over a scoop of white rice or creamy mashed potatoes.

Notes

Cool the dish to room temperature within two hours. Store in an airtight container in the fridge for up to 3–4 days. To freeze, place in a freezer-safe container for up to 2 months. Thaw in the fridge before reheating. Reheat gently on the stove over low heat or in the microwave until heated through.
