  • 2 medium zucchini, sliced Choose fresh, firm zucchini.
  • 1 pound ground beef Can be substituted with ground turkey or chicken.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder Can adjust according to spice preference.
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 tablespoon olive oil

  • chopped cilantro

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add ground beef, breaking it apart and cooking until browned.
  4. Stir in the zucchini slices, chili powder, cumin, salt, and pepper.
  5. Cook for another 5-7 minutes until the zucchini is tender.
  6. Serve warm, topped with cheese, sour cream, and cilantro if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Freeze for up to 2 months, and reheat before serving. Feel free to add other vegetables like bell peppers or corn, or spice it up with jalapeños or hot sauce.
