- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and mixed vegetables, and sauté until the vegetables are tender, about 4-5 minutes.
- Stir in the lemon juice, oregano, salt, and pepper.
- Serve the stir fry hot over cooked rice or quinoa.
Notes
Slice chicken thin and cut vegetables uniformly for even cooking. Avoid overcrowding the pan for good browning. Optionally, serve with a side salad or warm pita.
