Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Pound to even thickness
  • 1 cup grated Parmesan cheese Use fresh for best flavor
  • 1 cup breadcrumbs Panko for extra crunch is recommended
  • 2 pieces eggs Beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed tablespoon Olive oil for frying

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast in the eggs, then coat with the Parmesan-breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Fry the chicken breasts for 3-4 minutes on each side until golden brown.
  3. Transfer the chicken to a baking dish and bake for 15-20 minutes until cooked through.
Serving
  1. Serve the chicken hot with sides such as mashed potatoes, steamed vegetables, salad, or rice.
  2. Slice the chicken and place it on a plate for a neat look.

Notes

Pound the chicken to ensure even cooking and pat dry before breading. Do not overcrowd the skillet when frying. Adjust cook time for chicken thighs if used. Allow breaded chicken to rest briefly to help the coating adhere.
