For the Teriyaki Marinade
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon sesame oil
For the Chicken
  • 4 pieces chicken thighs Use skin-on for extra juiciness.
  • 2 tablespoons green onions, chopped For garnish before serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil to make the teriyaki marinade.
  3. Place chicken thighs in a baking dish and pour the marinade over them. Marinate for at least 30 minutes.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  2. Remove from the oven and let it rest for a few minutes.
  3. Garnish with chopped green onions before serving.

Notes

For better flavor, marinate the chicken thighs overnight. If you like a bit of heat, consider adding some red pepper flakes to the marinade. Don't overcrowd the baking dish to ensure even cooking.
