Preparation
  1. In a bowl, mix the white wine vinegar, minced garlic, rosemary, thyme, salt, and pepper together.
  2. Marinate the chicken thighs in the vinegar mixture for at least 30 minutes to allow the flavors to soak in.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the marinated chicken thighs to the skillet and cook until browned, about 6-7 minutes on each side.
  3. Reduce the heat and pour in the remaining marinade.
  4. Cover the skillet and let it simmer for 20-25 minutes, until the chicken is cooked through.
Serving
  1. Serve the chicken hot paired with your favorite sides, such as garlic bread or roasted vegetables.

Notes

For extra crispy skin, consider searing the chicken in the skillet first. You can add vegetables like bell peppers and onions for a complete meal.
