  • 4 pieces chicken thighs Bone-in, skin-on recommended for more flavor
  • 2 cups ripe tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 piece onion, chopped
  • 2 tsp Italian seasoning
  • to taste Salt and pepper
  • 2 tbsp olive oil
  • for garnish Fresh basil

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, and Italian seasoning, then brown them in the skillet on both sides, about 3-4 minutes per side.
  3. Transfer the browned chicken to a crockpot.
  4. In the same skillet, sauté the onion and garlic until soft, about 2-3 minutes.
  5. Add the sautéed onion and garlic to the crockpot along with the chopped tomatoes.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
Serving
  1. Serve over pasta or with crusty bread, and garnish with fresh basil.

Notes

For added flavor, consider using fresh herbs like oregano or thyme. Pair with a glass of white wine for a classic Italian experience. Leftovers can be stored in an airtight container for up to 4 days or frozen for about 3 months.
