Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the Parmesan cheese, bread crumbs, olive oil, garlic, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Press the Parmesan mixture onto the top of each salmon fillet to create a crust.
Baking
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
- Garnish with fresh parsley if desired, and serve immediately.
Notes
Cool the salmon to room temperature for no more than 2 hours. Store in an airtight container in the fridge for up to 3 days. Reheat gently in a 325°F (160°C) oven for about 8-10 minutes.
