- In a large bowl, combine coconut milk, soy sauce, brown sugar, garlic, ginger, coriander, turmeric, cumin, salt, and pepper.
- Add the chicken, ensuring it is well coated in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
Cooking
- Preheat your oven to 375°F (190°C).
- Place the marinated chicken in a baking dish and pour the remaining marinade over the top.
- Bake for 45-60 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Garnish with chopped cilantro before serving.
Notes
You can serve Indonesian Chicken with fluffy white rice or coconut rice. Adding a side of steamed vegetables or a fresh salad would also be a great complement. If you have leftovers, let the chicken cool down and store in an airtight container for up to 3 days. Freezing is also an option.
