Ingredients
  

For the Dough
  • 2 1/4 teaspoons active dry yeast Make sure the yeast is fresh.
  • 1 tablespoon sugar Used to activate the yeast.
  • 1 cup warm water (about 110°F) Ensure the water is warm, not hot.
  • 4 cups all-purpose flour Use more flour if dough is sticky.
  • 1 teaspoon salt Enhances the flavor of the dough.
  • 1/4 cup baking soda Used for boiling the pretzels.
  • 1 large egg, beaten For brushing on top before baking.
For Topping and Dipping
  • Coarse sea salt For sprinkling on top.
  • Mustard or cheese sauce For dipping.

Method
 

Preparation
  1. In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until foamy.
  2. Stir in the flour and salt until combined. Knead the dough on a floured surface for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise for about 1 hour or until doubled in size.
Cooking
  1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. In a large pot, bring 10 cups of water to a boil and add the baking soda.
  3. Divide the dough into small pieces, roll each piece into a rope, and cut it into bite-sized pieces.
  4. Boil the pretzel bites in the baking soda water for about 30 seconds, then remove and place them on the prepared baking sheet.
  5. Brush with beaten egg and sprinkle with coarse sea salt.
  6. Bake for 12-15 minutes or until golden brown.
Serving
  1. Serve warm with mustard or cheese sauce for dipping.

Notes

If you have any leftover pretzel bites, store them in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for about a week. To reheat, warm in the oven or microwave.
