  • 1 lb ground turkey Lean ground turkey
  • 2 large sweet potatoes, peeled and diced Cut into even pieces for uniform cooking
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped Any color bell pepper
Spices and Seasoning
  • 1 teaspoon paprika Can use smoked paprika for flavor
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust to personal preference
  • 1 tablespoon olive oil For sautéing
Garnish
  • to taste Fresh parsley Optional, for garnish

Method
 

Preparation and Cooking
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
  3. Add the ground turkey and cook until browned.
  4. Stir in the bell pepper, sweet potatoes, paprika, cumin, salt, and pepper.
  5. Transfer the mixture to a baking dish and spread it evenly.
  6. Cover with foil and bake for 25-30 minutes, or until sweet potatoes are tender.
  7. Remove foil and bake for an additional 10 minutes for a crispy top.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

Cool to room temperature within two hours. Store in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes or until hot. You can freeze portions for up to 2 months; thaw overnight in the fridge before reheating. Cut sweet potatoes evenly, brown turkey for flavor, and adjust seasoning before baking.
