- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Add the ground turkey and cook until browned.
- Stir in the bell pepper, sweet potatoes, paprika, cumin, salt, and pepper.
- Transfer the mixture to a baking dish and spread it evenly.
- Cover with foil and bake for 25-30 minutes, or until sweet potatoes are tender.
- Remove foil and bake for an additional 10 minutes for a crispy top.
- Garnish with fresh parsley if desired and serve warm.
Notes
Cool to room temperature within two hours. Store in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes or until hot. You can freeze portions for up to 2 months; thaw overnight in the fridge before reheating. Cut sweet potatoes evenly, brown turkey for flavor, and adjust seasoning before baking.
