  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 small head cauliflower, riced (or 4 cups cauliflower rice) Squeeze excess moisture if using store-bought
  • 1 cup shredded cheese (cheddar or mozzarella) Mix of cheeses recommended for gooey top
  • 1 tablespoon olive oil
  • 1 can diced tomatoes (optional) Can add for extra flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in salt, pepper, paprika, and Italian seasoning.
  5. Mix in cauliflower rice and diced tomatoes (if using), and cook for an additional 5-7 minutes.
  6. Transfer the mixture to a baking dish, sprinkle cheese on top, and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving.

Notes

Serve hot with a simple green salad or steamed vegetables. Add fresh parsley or a spoon of sour cream on top, if desired. Cool leftovers to room temperature and store in an airtight container in the fridge for up to 3-4 days. Reheat in the oven or microwave.
