- In a large skillet, heat olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side, or until no longer pink in the center.
- Remove the chicken from the skillet and set aside.
- Add broccoli florets to the skillet and sauté for 3-4 minutes.
- Add the fresh spinach and cook until wilted.
- Slice the cooked chicken and return it to the skillet.
- Drizzle with lemon juice if desired, mix well, and serve warm. Top with Parmesan cheese if using.
Notes
Serve warm from the pan. You can place it on rice, pasta, or eat it alone for a low-carb meal. Add a wedge of lemon on the side if you like.
