  • 1 lb chicken breast, cut into bite-sized pieces Boneless and skinless chicken breast recommended.
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 4 cloves garlic, minced Use fresh garlic for best flavor.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon lemon juice (optional) Adds brightness to the dish.
  • Cooked rice or quinoa (for serving) For serving, any grain works.

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Add broccoli florets and stir-fry for another 4-5 minutes until tender.
  5. Add fresh spinach and lemon juice (if using), stirring until the spinach wilts.
  6. Serve warm over cooked rice or quinoa.

Notes

Cool leftovers to room temperature within two hours, store in an airtight container, and refrigerate for up to 3 days. Reheat before serving. For optimal flavor, use fresh ingredients and avoid overcooking the spinach.
