Main Ingredients
  • 4 medium Zucchini Use firm zucchini so slices hold on the skewers.
  • 3 cloves Garlic, minced
  • 4 tablespoons Butter Melt before mixing.
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 8 Skewers Soak wooden skewers in water for 30 minutes before use to stop burning.

Preparation
  1. Preheat the grill.
  2. Slice the zucchini into thick rounds or strips.
  3. In a bowl, melt the butter and mix in minced garlic, olive oil, salt, and pepper.
  4. Toss the zucchini with the garlic butter mixture until well coated.
  5. Thread the zucchini onto skewers.
Cooking
  1. Grill the skewers for about 5-7 minutes, turning occasionally, until the zucchini is tender and has grill marks.
Serving
  1. Serve warm right from the grill.

Notes

For a fuller meal, serve with baked garlic parmesan chicken. Brush extra garlic butter while grilling for more flavor. They go well with rice, bread, or a fresh salad.
