  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, broccoli) Use any preferred mix of vegetables
  • 1 tablespoon olive oil Can substitute with melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper Adjust according to preference
  • 1 whole lemon, sliced
  • to taste fresh herbs (e.g., parsley or dill) for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the tilapia fillets.
  3. Drizzle olive oil over the fish and season it with garlic powder, onion powder, salt, and pepper.
  4. Add the mixed vegetables around the fish, ensuring they are well coated with the olive oil and seasonings.
  5. Place lemon slices on top of the fish and vegetables.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the fish is flaky and the vegetables are tender.
  3. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at a low temperature (around 350°F or 175°C).
