  • 2 medium zucchinis, sliced Drain excess liquid if very wet.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh) You can skip if desired.
  • 1 cup shredded cheese (cheddar or mozzarella) Use your favorite or a mix for more flavor.
  • 1 teaspoon Italian seasoning Use fresh herbs or Italian blend seasoning if preferred.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add ground turkey and cook until browned.
  4. Stir in zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to a baking dish, sprinkle cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

Serve warm and pair with a simple green salad or crusty bread. Cool and refrigerate leftovers for 3-4 days, or freeze for up to 2 months. Consider adding bell peppers or swapping turkey for chicken or pork for variations.
