Ingredients
  

For the Beef and Sauce
  • 2 pounds beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes optional
For Serving
  • 2 green onions sliced for garnish
  • Cooked white rice or noodles for serving

Method
 

Preparation
  1. Whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes in a bowl.
  2. Place the beef chuck roast in the Crock Pot and pour the sauce over it.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender.
  2. Once done, shred the beef using two forks.
  3. Serve over cooked rice or noodles and garnish with sliced green onions.

Notes

For deeper flavor, sear the roast lightly on all sides in a hot pan before putting it in the Crock Pot. If the sauce is too thin, remove the beef and thicken the sauce on the stove with a cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water). Taste the sauce before cooking and adjust sugar or soy to your liking. Use low heat for the best tender result.
