Ingredients
  

For the chicken marinade
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 whole lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
For the coating
  • 1 cup breadcrumbs (or panko) Panko recommended for extra crunch
  • as needed cooking spray For air frying

Method
 

Marinating the Chicken
  1. In a bowl, mix the chicken pieces with lemon juice, lemon zest, olive oil, garlic powder, onion powder, salt, and pepper. Marinate for at least 20 minutes.
Cooking the Chicken
  1. Preheat your air fryer to 400°F (200°C).
  2. Coat the marinated chicken pieces in breadcrumbs evenly.
  3. Place the coated chicken bites in the air fryer basket in a single layer. Spray lightly with cooking spray.
  4. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is golden and cooked through.

Notes

Make sure not to skip marinating the chicken for enhanced flavor. For a spicy kick, add cayenne pepper to the breadcrumb mixture. Consider serving with extra lemon juice for freshness.
