  • 4 large large bell peppers
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix different types of cheese.
  • 1/2 cup cooked rice Can be substituted with cauliflower rice for a lower-carb option.
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, cooked rice, green onions, garlic powder, salt, and pepper. Mix until well blended.
  4. Stuff the mixture into each bell pepper, packing it tightly.
Baking
  1. Place the stuffed peppers upright in a baking dish. Drizzle with olive oil.
  2. Cover with foil and bake for 25-30 minutes.
  3. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the tops are golden.
