Ingredients
  

For the Salad
  • 2 pieces grilled chicken breasts Marinated in chipotle sauce
  • 4 cups mixed greens Use any fresh leafy greens
  • 1 piece avocado Sliced; use ripe but firm
  • 1 cup cherry tomatoes Halved
For the Dressing
  • 2 tablespoons chipotle sauce For marinating chicken
  • 1/4 cup lime vinaigrette To drizzle on salad
  • to taste Salt and pepper For seasoning

Method
 

Preparation
  1. Marinate the chicken in chipotle sauce for at least 30 minutes.
  2. Grill the chicken until fully cooked. Let it rest for 5 minutes, then slice.
  3. In a large bowl, toss the mixed greens, avocado, and cherry tomatoes.
Assembly
  1. Add the sliced chicken on top of the salad.
  2. Drizzle with lime vinaigrette, and season with salt and pepper to taste.
  3. Serve immediately to keep the avocado fresh.

Notes

Serve the salad on cold plates with extra lime wedges and chipotle sauce on the side for added flavor. Store components separately for leftovers.
