Preparation
- Marinate the chicken in chipotle sauce for at least 30 minutes.
- Grill the chicken until fully cooked. Let it rest for 5 minutes, then slice.
- In a large bowl, toss the mixed greens, avocado, and cherry tomatoes.
Assembly
- Add the sliced chicken on top of the salad.
- Drizzle with lime vinaigrette, and season with salt and pepper to taste.
- Serve immediately to keep the avocado fresh.
Notes
Serve the salad on cold plates with extra lime wedges and chipotle sauce on the side for added flavor. Store components separately for leftovers.
