Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the ground chicken, grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into small bite-sized balls or patties.
- Place the poppers on a baking sheet lined with parchment paper and spray lightly with olive oil.
Cooking
- Bake for 20-25 minutes, or until cooked through and golden brown.
Notes
Serve warm as an appetizer or snack. Great with dipping sauces like ranch or marinara. Store leftovers in an airtight container in the refrigerator for 3-4 days. To reheat, place back in the oven for a few minutes.
