  • 1 pound lean ground chicken
  • 2 medium zucchini, grated Ensure to squeeze out excess moisture
  • 1/2 cup breadcrumbs Can substitute with almond flour for low-carb option
  • 1/4 cup grated Parmesan cheese Feel free to experiment with different types of cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Add additional spices as desired
  • Salt and pepper to taste
  • Olive oil spray For spraying the baking sheet

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the ground chicken, grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form the mixture into small bite-sized balls or patties.
  4. Place the poppers on a baking sheet lined with parchment paper and spray lightly with olive oil.
Cooking
  1. Bake for 20-25 minutes, or until cooked through and golden brown.

Notes

Serve warm as an appetizer or snack. Great with dipping sauces like ranch or marinara. Store leftovers in an airtight container in the refrigerator for 3-4 days. To reheat, place back in the oven for a few minutes.
