  • 1 pound lean ground chicken
  • 2 medium zucchini, grated Squeeze out excess moisture.
  • 1/2 cup breadcrumbs Can substitute with almond flour for low-carb.
  • 1/4 cup grated Parmesan cheese Feel free to experiment with different cheeses.
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Add more spices to taste if desired.
  • to taste Salt and pepper
  • as needed Olive oil spray For baking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the ground chicken, grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form the mixture into small bite-sized balls or patties.
  4. Place the poppers on a baking sheet lined with parchment paper and spray lightly with olive oil.
Cooking
  1. Bake for 20-25 minutes, or until cooked through and golden brown.
Serving
  1. Serve warm as an appetizer or snack, paired with your favorite dipping sauces.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven for a few minutes until warmed through.
