  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 head cauliflower, riced Can use fresh or frozen.
  • 1 whole bell pepper, diced Any color bell pepper works.
  • 1 whole onion, diced Yellow or white onion is preferred.
  • 2 cloves garlic, minced
  • 2 tbsp olive oil For sautéing the vegetables.
  • to taste Salt and pepper
  • Optional spices (paprika, cumin) Add according to taste.

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Add garlic and cook for another minute.
  4. Push the veggies to the side of the skillet and add the ground beef. Cook until browned, breaking it up as it cooks.
  5. Stir in the riced cauliflower and cook until tender, about 5-7 minutes.
  6. Season with salt, pepper, and any additional spices.
  7. Serve hot and enjoy!

Notes

For best flavor, use fresh ingredients. This dish can be customized with additional vegetables like zucchini or mushrooms. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
