Ingredients
  

Main ingredients
  • 2 pieces chicken breasts
  • 2 medium zucchinis, sliced Slice evenly for even cooking.
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded or cubed Use fresh mozzarella for a creamier melt.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

Cooking the Chicken
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 6-7 minutes per side.
  3. Remove chicken and set aside.
Cooking the Vegetables
  1. In the same skillet, add garlic and zucchini; sauté for 3-4 minutes.
  2. Add cherry tomatoes and return the chicken to the skillet.
  3. Top with mozzarella and cover the skillet for 2 minutes until cheese is melted.
Serving
  1. Garnish with fresh basil and serve hot from the skillet.

Notes

Cool the dish to room temperature, then place in an airtight container. Keep in the fridge up to 3 days. Reheat gently in a skillet or microwave until warm.
