Method
Cooking the Chicken
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 6-7 minutes per side.
- Remove chicken and set aside.
Cooking the Vegetables
- In the same skillet, add garlic and zucchini; sauté for 3-4 minutes.
- Add cherry tomatoes and return the chicken to the skillet.
- Top with mozzarella and cover the skillet for 2 minutes until cheese is melted.
Serving
- Garnish with fresh basil and serve hot from the skillet.
Notes
Cool the dish to room temperature, then place in an airtight container. Keep in the fridge up to 3 days. Reheat gently in a skillet or microwave until warm.
