Caprese Chicken Zucchini Skillet

Main Ingredients
  • 2 pieces chicken breasts Boneless preferred
  • 2 medium zucchini, sliced Fresh and firm
  • 1 cup cherry tomatoes, halved Use a variety for color
  • 1 cup fresh mozzarella cheese, diced Firm mozzarella recommended
  • 1/4 cup fresh basil, chopped For garnish and flavor
  • Salt and pepper to taste For seasoning
  • Olive oil for cooking To coat the skillet

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
Cooking
  1. In the same skillet, add the sliced zucchini and cook for 3-4 minutes until slightly tender.
  2. Add the cherry tomatoes and cook for an additional 2 minutes.
  3. Return the chicken to the skillet, then top with mozzarella cheese and cover to melt.
  4. Once cheese is melted, sprinkle with fresh basil before serving.
  5. Serve hot and enjoy!

Notes

Pound the chicken to even thickness for even cooking. Let the chicken rest after cooking for juicier meat. Store leftovers in an airtight container for up to 3 days.
