  • 8 oz fettuccine pasta Cooked according to package instructions
  • 1 lb smoked sausage, sliced Browned in olive oil
  • 2 tablespoons olive oil For cooking the sausage
  • 3 cloves garlic, minced Added for flavor
  • 1 cup heavy cream Warm before adding cheese
  • 1 cup grated Parmesan cheese Use freshly grated for best results
  • 1 tablespoon Cajun seasoning Adjust to taste

Method
 

Cooking
  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Stir in the heavy cream and bring to a simmer.
  5. Add Parmesan cheese and Cajun seasoning, stirring until the cheese is melted and the sauce is smooth.
  6. Combine the cooked pasta with the sauce, mixing well to coat.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

Serve hot on plates or in a large bowl. Sprinkle extra Parmesan and parsley on top. Offer a side salad or steamed vegetables. Serve with crusty bread if you like. For storage, cool the pasta to room temperature, put it in an airtight container, and store in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream or milk to loosen the sauce. Do not freeze the Alfredo sauce; it may separate.
