  • 2 pieces chicken breasts Seasoned with salt and pepper
  • 2 medium sweet potatoes, diced Cut into small, even pieces for faster cooking
  • 1 cup BBQ sauce Use low-sodium if desired
  • 1 cup shredded cheese (cheddar or mozzarella) For topping
  • 1 piece onion, diced Adds flavor
  • 2 tablespoons olive oil For cooking
  • to taste Salt and pepper For seasoning
  • for garnish Fresh parsley Chopped

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and onions, cooking until sweet potatoes are tender, about 10-15 minutes.
  3. Season chicken breasts with salt and pepper, then add to the skillet.
  4. Pour BBQ sauce over the chicken and sweet potatoes.
  5. Cover and cook for another 10-15 minutes, until chicken is cooked through.
  6. Sprinkle cheese over the top and cover until melted.
  7. Garnish with fresh parsley before serving.

Notes

Serve hot from the skillet with a side of green salad, steamed veggies, or rice. You can also spoon extra BBQ sauce on top.
