Preparation
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, garlic, lime juice, salt, and pepper.
- Add chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes.
Grilling
- Preheat a grill or grill pan over medium-high heat.
- Thread marinated chicken onto skewers.
- Grill skewers for about 5-7 minutes on each side or until chicken is cooked through and has nice grill marks.
- Garnish with chopped green onions and serve hot.
Notes
Serve the skewers hot. They go well with rice, a simple salad, or grilled vegetables. You can also serve extra sweet chili sauce on the side for dipping. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
