Ingredients
  

For the marinade
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
For grilling
  • Skewers (wooden or metal) If using wooden skewers, soak them in water for 30 minutes before grilling.
  • Chopped green onions for garnish

Preparation
  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, garlic, lime juice, salt, and pepper.
  2. Add chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes.
Grilling
  1. Preheat a grill or grill pan over medium-high heat.
  2. Thread marinated chicken onto skewers.
  3. Grill skewers for about 5-7 minutes on each side or until chicken is cooked through and has nice grill marks.
  4. Garnish with chopped green onions and serve hot.

Notes

Serve the skewers hot. They go well with rice, a simple salad, or grilled vegetables. You can also serve extra sweet chili sauce on the side for dipping. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
