- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the mashed bananas and softened butter.
- Add the brown sugar, granulated sugar, egg, and vanilla extract; mix until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store leftover cookies in an airtight container at room temperature for up to five days. For longer freshness, refrigerate for about a week or freeze, separating layers with parchment paper.
