Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the mashed bananas and softened butter.
  3. Add the brown sugar, granulated sugar, egg, and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Store leftover cookies in an airtight container at room temperature for up to five days. For longer freshness, refrigerate for about a week or freeze, separating layers with parchment paper.
