  • 4 pieces salmon fillets Fresh or thawed
  • 1 piece ripe avocado, diced Use a perfectly ripe avocado for the best texture
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese
  • 2 tablespoons olive oil Extra virgin is preferred
  • 1 piece lemon, juiced Fresh lemon juice enhances the flavor
  • to taste none Salt and pepper Season according to preference
  • to taste none Fresh herbs (such as dill or parsley) for garnish Use your choice of fresh herbs

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle olive oil and lemon juice over the salmon and season with salt and pepper.
Cooking
  1. Bake the salmon in the preheated oven for about 15-20 minutes, or until it flakes easily with a fork.
  2. While the salmon is baking, mix the diced avocado and crumbled feta in a bowl.
  3. Once the salmon is cooked, remove it from the oven and top each fillet with the avocado and feta mixture.
  4. Garnish with fresh herbs before serving.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. It is best to consume them within two days for optimal freshness. Reheat gently in the oven to maintain the texture of the salmon.
