  • 4 pieces chicken thighs Can substitute with chicken breasts, drumsticks, or wings.
  • 2 tablespoons jerk spice blend Store-bought variety can be used.
  • 1 cup pineapple chunks Fresh pineapple adds vibrant taste.
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped green onions for garnish Adds freshness to the dish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the jerk spice blend, olive oil, soy sauce, and lime juice.
  3. Marinate the chicken thighs in the mixture for at least 30 minutes.
Cooking
  1. Place the marinated chicken on a baking dish, and top with pineapple chunks.
  2. Season with salt and pepper.
  3. Bake for 35-40 minutes, or until the chicken is cooked through and juices run clear.
  4. Garnish with chopped green onions before serving.

Notes

For a complete meal, serve with rice or quinoa. Leftovers can be stored in an airtight container in the refrigerator for up to three days and can be reheated in the oven. Marinate longer for enhanced flavor.
