  • 2 tablespoons jerk spice blend Store-bought or homemade
  • 1 cup pineapple chunks Can use fresh or canned
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice Freshly squeezed is preferred
  • Salt and pepper to taste
  • Chopped green onions For garnish

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the jerk spice blend, olive oil, soy sauce, and lime juice.
  3. Marinate the chicken thighs in the mixture for at least 30 minutes.
Cooking
  1. Place the marinated chicken on a baking dish, and top with pineapple chunks.
  2. Season with salt and pepper.
  3. Bake for 35-40 minutes, or until the chicken is cooked through and juices run clear.
  4. Garnish with chopped green onions before serving.

Notes

For best flavor, marinate the chicken longer if possible, up to 4 hours or overnight. You can also substitute with chicken breasts, drumsticks, or wings. Adding bell peppers with the pineapple can provide more color and texture.
